cass' pumpkin puff pancakes

1 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp pumpkin pie spice
2 TBSP melted butter
1 cup milk
1 TBSP honey
1/2 cup pumpkin (cooked and pureed)
2 egg yolks, beaten
2 egg whites, stiffly beaten

Sift dry ingredients together. Combine wet ingredients, except for egg whites. Stir. Fold in egg whites.

Serve with butter and maple syrup. (Or fresh whipped cream and apple/ pumpkin butter.)

Makes 8 pancakes.

Looks as though there will be a new target for the ridiculous amount of pureed pumpkin wasting away in the ice box. Thanks for the idea. Now, if I could stop time for a day or so to really enjoy the results...
